Grape varities:

95% Rolle, 5% Semillon

Earth and Exposure:
The earth is clay-limestone and naturally rich in organic material, ensuring a high-quality wine.The exposure of the vineyard from East to West allowes maximum sun exposure.

Cultivation Techniques:
The methods employed by the vineyard are traditional and respect our nature. Weeding is carried out by machines to avoid the use of weed-killers and other chemical products.

Harvest:
From the middle of August to the end of September. The grapes are mainly harvested manually and each variety is vinified separately. The grapes enter the vats by gravity in order to prevent any oxidation or maceration. The plots are carefully selected and specific to this vintage.

Vinification:
The grapes are carefully sorted manually on the conveyor belt. The berries are then gently crushed using pneumatic crushers, thus preventing the extraction of the tannins. The grape juice is then clarified before the alcoholic fermentation starts.

The must is then sent into carefully chosen oak barrels , where the alcoholic fermentation will take place at temperatures maintained at 20°C. The wines are aged in barrels for eight months with a regular dispersal of the deposits.

Wine tasting:
A yellow gold dress with a limpid brilliance. A very fine and aromatic nose expresses vanilla, white peach, pear and safran. The full taste is of an exceptionnal complexity. Aged in oak barrels this wine reveals a still rare fatness in Provencal white wines. The PRIEURE WHITE is to be opened in the next three to five years accompanied by a fish in sauce dish or a bouillabaisse.
