About Our Firestone Vineyard Estate
The Firestone Vineyard estate is uniquely situated on a series of rocky mesas in the heart of the Santa Ynez Valley. Here, well-drained soils and an extended growing season contribute to the ripening of exquisitely balanced and flavorful grapes. The imprint of our estate is integral to the character and individuality of each Firestone Vineyard wine.

Winemaker’s Tasting Notes
Our 2004 Chardonnay begins with warm, toasty aromas of peach, pear and caramel. Rounded tropical flavors reveal accents of honey and citrus. The texture is full and creamy, with buttery notes that unfold into a bright, quenching finish.
Winemaking
The grapes were hand-harvested at our estate and select neighboring vineyards. After light crushing, pressing and cold settling, the juice was fermented in a combination of French oak barrels and stainless steel tanks. A slow-fermenting yeast was employed to enhance textural and aromatic complexity. The wine was aged sur lie for nine months in French oak barrels.
Cuisine Pairing
Our 2004 Chardonnay's rich fruit character and vivid acidity ensure versatility with cuisine. Recommended pairings include roast chicken with lemon and herbs, sole sautéed in butter, and gnocchi with cream sauce.

Chateau Sainte Eulalie

Terroir : Pebbled top soil, with a high percentage of clay and limestone, rich in manganese. Exceptional “terroir” due to the nature of its soils and its exposure (terraced vineyard at 200m in altitude, facing south and sheltered from northwinds).
Grape varieties : 55% Syrah, 30% Grenache, 15% Carignan
Vinification : Hand and a part of mechanical harvesting, alcoholic fermentation with “micro-oxygenation”, vatting of 15 to 20 days, maturing for 12 months in new oak barrels (40%) and 1 or 2 years barrels.
Tasting : A beautiful intense and deep color. A delicate woody, with ripe fruits and toasted nose. A fat attack that evolves a fine and powerful tannins, full. Lingering final. A full, rich and fleshy wine.
Serve with : Game, grilled red meat with sauce, cheeses.
Ageing time : 6 to 8 ans
