Oeuilly (Vallée de la Marne) - on the hillside
Soils Chalk, Sparnacien (chalk mixed with clay), Sand, Limestone and shells
Vinification First fermentation in stainless steel vats with control of temperature at each stage of fermentation
Reserve Wine 1995
Bottling Mai 1997
Disgorging September 2001, by hand
Eye A sparkling yellow lightly amber, fine and intensive bubbles
Nose Pleasant bouquet of ripe fruits, powerful, with apricot and grilled almond flavours
Mouth Full and structured, liveliness and length in mouth
Food pairing : Gastronomic Champagne, all in power, ideal for rural and family meals. It can accompagny cassolettes, fine and simmered meats, tepid soufflés.
